This Mexican Street Corn Casserole is such a delicious and unique tasting side dish thats perfect for the summer.
If you’re familiar with elote or Mexican street corn, this is a play on that. Of course its not authentic, but it sure is good.
This recipe was given to me by a friend over ten years ago and I have made it so many times that I cant even count.
It’s the perfect side dish for barbecues, cook outs and any summer party or get together. The compliments that I receive are always so positive.
I’ve also made this side dish plenty of times for a casual summer dinner at home when fresh Jersey corn is in full swing. Its just so good!
Not only is is super delicious, but it’s easy to make, too.
This recipe takes barley any time to put together and the ingredients are super simple.
It gets a lot of attention at get togethers because its a little something different that stands out. I love traditional barbecue side dishes just as much as the next person but its nice to have some variety, too, every once in a while.
This is truly one of my favorite side dishes to make, serve and enjoy all summer long.

Mexican Street Corn Casserole Variations
I like this recipe for street corn casserole exactly as it is, but here are some ways you can switch it up if you’d like to.
- Corn- Instead of removing the corn off the cob, canned corn would work here, too. Just be sure to drain it really well and use about 3 cups.
- Cheese- Use whatever cheese here that you’d like. It all works.
- Spice- If you’d like to add some heat to this dish, try adding some diced chilis or jalapenos. Spicier cheeses like pepper jack would add just the right amount of heat. A little more chili powder would do the trick, too.

Mexican Street Corn Casserole Ingredients
- Corn on the cob or canned corn thats been drained
- Mayonnaise
- Sour cream
- Shredded cheese (hand shredded, nor pre shredded)
- Salt and pepper, garlic powder, chili powder
- Cilantro (optional)
Instructions
First, using a knife or a kitchen tool, remove the corn from the cob and place it into a medium sized bowl.
Next add the mayonnaise and sour cream.
Now add the shredded cheese. Save a little for the top of the casserole later.
Then add the salt, pepper, chili powder and garlic power.
Now mix everything together until it’s evenly combined.
After that place it in a baking dish and smooth it until it’s evenly spread out.
Add just a little more cheese to the top of the corn
Next bake it at 375° for about 20 minutes or until the cheese is melted and the casserole is nice and bubbly.
Finally add some shredded cilantro to the top when you’re done (optional) , let it cool slightly and enjoy!

MEXICAN STREET CORN CASSEROLE
Easy to make Mexican Street Corn Casserole is made with fresh or canned corn baked with mayonnaise, sour cream, shredded cheese and seasoning for a perfect summer side dish.

Ingredients
- 4-5 ears Corn on the cob
- 1/4 cup Mayonaise
- 1/2 cup Sour Cream
- 1 cup Cheddar Cheese, shredded
- 1 tbs Garlic Powder
- 1 tbs Chili Powder
- Salt & Pepper to taste
- Cilantro, shredded (optional)
Instructions
First, preheat the oven to 375 degrees.
Carefully remove the corn from the cob using a knife or kitchen tool.
Add all of the ingredients to a medium sided bowl. Reserve about 1/4 cup of the shredded cheddar cheese.
Stir everything together until its evenly combined and transfer it to a baking dish.
Sprinkle the rest of the cheddar cheese on top of the casserole and bake, uncovered, for about 20 min or unit the cheese is melted and the casserole is bubbling.
Let it cool slightly and add shredded cilantro to the top (optional). Serve warm

Could you add anything else to the did to “jazz” it up? Like cilantro or a can of green diced chillies?

Heyyyy yes absolutely. Try chili’s or jalapeños for sure. Cilantro works well here too. Btw I love that you said jazz it up ☺️
